Fish {Salmon} Tacos & the World's Best Kept Secret

I have had fish tacos all of two times...as in TWICE...and both times I've made them... just in the last couple of weeks.  Gotta confess, they never really appealed to me in restaurants, given the other options.  But since we aren't eating red meat now, I decided to give it a try...and I was pleasantly surprised!

I started by cooking up some peppers and onions.


Then I heated two salmon foil packs and added taco seasoning (NO MSG) with a little water for some extra flavor.  I'm sure fresh salmon would be tastier (and healthier), but this is what I had on hand.


I brushed a tad bit of olive oil on some white corn tortillas (just enough to soften them a bit) and warmed them in the oven.  Next time, I will try them without the oil to try to cut out that extra fat.
UPDATE: Today I just warmed them in the oven, and they were still delicious and soft! No extra fat!

Then I layered ingredients on the shells:
Homemade Refried Beans
Lettuce
Black Bean and Corn Salsa (recipe here)
Homemade Salsa (recipe here)
Peppers and Onions
Sliced Olives
Diced Avocado

and...YUMMO!!

These are VERY messy for the kids, but they gobble them right up! ...it's the salsa...gets 'em every time...they want it on everything...just like their momma!! :)


 And I have to share my most recent and greatest discovery...though, I'll probably find out I'm the last to figure this out!! I have a huge love for chips and salsa, as in I prefer it over chocolate and ice cream!!

So it is always a sad day for me when I realize my tortilla chips have gone stale - not from being in the pantry too long (for sure!), but rather from some other member of my family not closing the bag correctly and completely.

So just last week, as I cried over a FULL bag (COSTCO size) of stale chips, I had a revelation!!  Why not heat them in the oven like you would packaged taco shells...I just knew it would work...have you ever tasted a hard taco shell before you bake it?? Worse than stale chips!!  

The result was HEAVENLY...DEE-VINE!!! Better than getting warm chips at my favorite Mexican restaurant.  Why didn't I think of this ten years ago??!! Why did no one share this secret with me??  

I will be warming my chips in the oven from now on...even if they aren't stale.  It's super easy to heat them in a single layer at 350° for about 8-10 minutes. So cripsy and fresh tasting...

    1. ...hey we've eaten frog legs and alligator and turtle and rabbit...why not fish tacos?? lol! ...tastes like chicken! :)

  3. I made fish tacos for the first time recently, and we all loved them! I made mine with tilapia, and used a pineapple salsa. I am definitely going to be trying this warming the chips trick. I have also nearly cried over my organic Costco corn chips getting stale in the past! Thanks for posting:)
